Super Simple Greek Salad

Ingredients

4 tbsp Greek yogurt

Fresh basil leaves (torn)

2 tbsp extra virgin olive oil

2 cloves garlic (crushed)

Zest and juice of half a lemon

1 Romaine lettuce (chopped)

1 cucumber (chopped into chunks)

1 packet of cherry or on-the-vine tomatoes (halved)

1 jar Kalamata pitted olives (drained)

1 red onion (sliced)

1 packet of feta cheese (crumbled)


Method

1. Blend the yogurt, olive oil, garlic, and lemon juice. Set aside.

2. Add lettuce, cucumber, torn basil leaves, and tomatoes into a salad bowl.

3. Add Kalamata olives, red onion, and crumbled feta.

4. Mix everything together.

5. Serve onto four plates and drizzle with the dressing.
