Protein Peanut Butter Cups

Ingredients

85g dark chocolate (70% +) (dairy-free if required) chopped into small chunks

2 tsp coconut oil

1 tbsp. unsweetened almond milk

125g natural peanut butter

30g vanilla protein powder

½ tsp. vanilla extract

Method

  1. Place the coconut oil and chocolate chunks into a small pot and melt over low heat.

  2. Remove from the heat before the chocolate chips have fully melted, whilst mixing together the almond milk, peanut butter, protein powder and vanilla extract

  3. Press the peanut butter mixture into mini silicone muffin moulds. Press down hard so the mixture sticks together.

  4. Pour the melted chocolate over the top, dividing the chocolate equally between the peanut butter cups.

  5. Place into the freezer to set.

  6. Enjoy!
