Easy Puffed Quinoa Peanut Butter Bars

Ingredients

115g dates

130g peanut butter, natural

35g puffed quinoa

30g Brazil nuts, chopped

2 tbsp. pumpkin seeds

Method

  1. Soak the dates in hot water for 5 minutes, until softened. Then add to a small pan and mash with a fork.

  2. Add the peanut butter to the pan and place over a low heat, stirring until combined. Add in the puffed quinoa, Brazil nuts, and pumpkin seeds and stir to form a ‘dough’.

  3. Press the ‘dough’ into a container and chill in the fridge for 1 hour to firm up.

  4. Cut into 6 even-sized bars and enjoy!
