Crispy herby cod
Serves: 4
Ingredients
4 fillets of cod (or other white fish)
½ cup of almond flour
1 cup coconut flour
4 tablespoons parmesan cheese
3 teaspoons of mixed herbs
1/2 teaspoon garlic powder
1 cup of milk
6 tablespoons of olive oil
Method
Mix all the dry ingredients in a bowl.
Dip the fish into the milk and then the dry ingredients until covered.
Place on an oven dish greased with 2 tablespoons of olive oil
Drizzle the remaining oil over the fish.
Cook at 200 degrees C/180 degrees C fan / gas 6 for twenty to 30 minutes or until the cod is cooked.
