Crispy herby cod

 

Serves: 4

Ingredients

  • 4 fillets of cod (or other white fish)

  • ½ cup of almond flour

  • 1 cup coconut flour

  • 4 tablespoons parmesan cheese

  • 3 teaspoons of mixed herbs

  • 1/2 teaspoon garlic powder

  • 1 cup of milk

  • 6 tablespoons of olive oil

 

Method

  • Mix all the dry ingredients in a bowl.

  • Dip the fish into the milk and then the dry ingredients until covered.

  • Place on an oven dish greased with 2 tablespoons of olive oil

  • Drizzle the remaining oil over the fish.

  • Cook at 200 degrees C/180 degrees C fan / gas 6 for twenty to 30 minutes or until the cod is cooked.
