Broccoli and plant-based cheese soup

 

Ingredients

  • 2 onions

  • 2 cloves of garlic.

  • 500g of vegetable stock

  • 2 heads of broccoli, chopped into florets.

  • 1 packet of herby or blue plant-based cheese (approximately 115g) (I love Honestly Tasty’s Herbi or KInda Co’s Blue or Garlic and Herb)

  • Mixed herbs

 

Serves: 2

Prep Time: 5 minutes

 
 

Method

  1. Chop onion and garlic cloves. Allow to cook in the oil until they soften for around 5 minutes. Add water if necessary to stop them browning.

  2. Add the broccoli and cook for 15 minutes until the broccoli is soft.

  3. Take off the hob and let the soup cool for a few minutes before adding the cheese, stirring all the time. Reheat (if needed) before serving.
