Banana Pancakes

Serves: 2

 

Ingredients

  • 1 ripe banana

  • 2 eggs

  • 1 tablespoon of olive oil

 

Method

Mash the banana.

Add to the eggs and beat or put in a blender.

Heat 1 tablespoon of the oil in saucepan.

Pour half of the mixture into the pan.

Cook until light brown on each side.

Repeat with the second pancake.

 

Serve with a tablespoon of Greek yogurt, berries and a sprinkle of cinnamon OR nut butter.
