Supercharged Seed Bread

Ingredients

200g ground almonds/almond flour

50g walnuts

50g pumpkin seeds

50g hemp or sunflower seeds

50g linseed/flaxseed (no need to grind)

50g chia seeds

1/3 cup olive oil

½ tsp bicarbonate of soda

3  whole eggs plus two egg whites


NB: You can play around with the mix of nuts here. Take out any you don’t like! Add in others like hazelnuts or macadamia nuts if you prefer! Just keep the amounts the same.

Serves 6-8

Method

Preheat oven to 160°C (250°F)

1.     Line a 2lb loaf tin with parchment paper and place on a baking sheet.

2.     Using a blender or coffee grinder, lightly grind all the whole seeds (apart from the linseed/flaxseed - I like to keep these whole) and walnuts.

3. Place the eggs into a bowl. Mix thoroughly with the ground almonds.

4.  Add the olive oil. Stir in the rest of the nuts, seeds and bicarbonate of soda.

5.  Spoon the mixture into the loaf tin and bake for about 45 minutes (or until a skewer comes out clean).
