Super Roasted Red Pepper and Tomato Soup

 

Ingredients

1 can of chopped tomatoes

2 chopped red peppers, deseeded

2 medium-large onions, peeled and chopped

3 cloves of garlic, peeled and chopped

1/2 jar of flame roasted red peppers

500ml of stock (homemade or from a low slat stock cube)

1 tablespoon of sundried tomato paste

Mixed herbs

Seasoning (as required)

1 spoonful of curry powder (if desired)

1 scoop of plain protein powder

Half fat crème fraîche or plant-based alternative (unsweetend soya yogurt) for garnish

Basil leaves for garnish

Method

Put the chopped peppers, onions, garlic, roasted red peppers, the can of chopped tomatoes, stock, curry powder, seasoning , mixed herbs and sundried tomato paste.

Place on your hob and allow to simmer for 30-40 minutes until the peppers are soft.

Allow to cool and then blend

Serve with 1 scoop of protein powder per person mixed in (giving a delicious creamy taste and a protein punch!)

Garnish with half fat crème fraîche or a plant-based alternative. (I love unsweetened plain soya yogurt) and enjoy!
