Easy mirin salmon

A great source of omega 3.

Serves: 2

Ingredients

  • 2 pieces of salmon (wild if possible)

  • 80ml soya sauce -  I use Clearspring’s gluten free tamari

  • 80ml mirin sauce -  I use Clearspring’s Mirin sauce.

Buy sauces carefully as many have added sugars

Method

Leave the salmon to marinate in the soya and mirin sauces for at least an hour, preferably 4-5. Spoon the mixture over the fish half way through this time.

Cook in the oven (approx 200C) for 15-20 minutes.

Serve with brown basmati rice on a bed of vegetables: steamed kale, ribbons of courgette and carrots or steamed/pan-cooked pak choi.
