Chilled cucumber soup

Ingredients
2 cucumbers (skin on)
3 cloves of garlic, crushed
1 large avocado
6 chopped spring onions
1 green pepper
1 small bunch of mint
1 cup of cherry/on-the-vine tomatoes
1-2 scoops of protein powder
2 heaped tablespoons of plain Greek-style yogurt
Method
Add all the ingredients together and blend. I like my soup on the thicker side but add water (or coconut milk) if you’d like to make your soup more liquid.
Chill in the fridge for several hours.
Serve with a dollop of plain Greek-style yogurt or non-dairy alternative and garnish with chopped chives.
