Pea and coriander soup

A simple soup full of green goodness!

Serves: 4

Prep Time: 5 minutes

Cook Time: 20 minutes

 

Ingredients

  • 1kg peas

  • 2 tablespoons of olive oil

  • 2-3 large onions, chopped

  • 3 cloves of garlic crushed

  • 1 litre of vegetable stock

  • Bunch of coriander (chopped or torn)

 

Method

  1. Add oil to pan.

  2. Add the onion and garlic. Allow to cook until they soften for around 3-5 minutes. Do not brown.

  3. Add the peas and stock and simmer for 10 minutes.

  4. Add coriander leaves.

  5. Blend or liquidise.

  6. Add water/stock until the soup reached your desired consistency.

  7. Season to taste.
