Pea and coriander soup
A simple soup full of green goodness!
Serves: 4
Prep Time: 5 minutes
Cook Time: 20 minutes
Ingredients
1kg peas
2 tablespoons of olive oil
2-3 large onions, chopped
3 cloves of garlic crushed
1 litre of vegetable stock
Bunch of coriander (chopped or torn)
Method
Add oil to pan.
Add the onion and garlic. Allow to cook until they soften for around 3-5 minutes. Do not brown.
Add the peas and stock and simmer for 10 minutes.
Add coriander leaves.
Blend or liquidise.
Add water/stock until the soup reached your desired consistency.
Season to taste.
