Goat’s cheese pesto chicken
Serves: 2
Ingredients
2 chicken breasts.
1 tablespoon olive oil.
2oz soft goat’s cheese.
2oz pine nuts.
Chopped fresh basil.
2 cloves of garlic (crushed).
1 tablespoon of freshly squeezed lemon juice.
Zest from half a lemon.
Method
Mix the cheese, pine nuts, basil, garlic and lemon juice and zest together in a blender.
Brush the two pieces of chicken with the oil.
With a knife, cut the chicken breasts open lengthways. Split the pesto mixture between the two pieces of chicken and
Place on a baking tray. Cook at 200 degrees C/180 degrees C fan /gas 6.
Cook for 20-30 minutes or until the chicken is cooked.
Serve with brown rice and steamed green vegetables.
