Goat’s cheese pesto chicken

Serves: 2

 
 

Ingredients

  • 2 chicken breasts.

  • 1 tablespoon olive oil.

  • 2oz soft goat’s cheese.

  • 2oz pine nuts.

  • Chopped fresh basil.

  • 2 cloves of garlic (crushed).

  • 1 tablespoon of freshly squeezed lemon juice.

  • Zest from half a lemon.  

 

Method

  • Mix the cheese, pine nuts, basil, garlic and lemon juice and zest together in a blender.

  • Brush the two pieces of chicken with the oil.

  • With a knife, cut the chicken breasts open lengthways. Split the pesto mixture between the two pieces of chicken and

  • Place on a baking tray. Cook at 200 degrees C/180 degrees C fan /gas 6.

  • Cook for 20-30 minutes or until the chicken is cooked.

  • Serve with brown rice and steamed green vegetables.
