Courgette and cheese soup

Cheesy, delicious courgette soup - hearty and wholesome for those chilly days.

Serves: 4

Prep Time: 10 minutes

Cook Time: 30 minutes

 

Ingredients

  • 1.5 lbs courgettes

  • 2-3 onions

  • 2 cloves of garlic

  • 2 tablespoons olive oil

  • 1.5 litres vegetable stock

  • 3oz parmesan or blue cheese or vegan alternatives

  • 2 tablespoons lemon juice

  • 2 tablespoons of Greek yogurt or non-dairy equivalent

  • Chopped parsley or chives

 

Method

  1. Wash and trim courgettes. Do not peel. Slice finely.

  2. Chop onion and crush garlic. Allow to cook in the oil until they soften for around 5 minutes. Add more oil or water if necessary to stop them browning.

  3. Add courgettes and cook for 5 minutes.

  4. Add stock and bring to the boil, stirring all the time.

  5. Simmer for 15-20 minutes.

  6. Liquidise and add the cheese, lemon juice and season to taste.

  7. Add water/stock until the soup reaches the consistency you require.

  8. Serve with a swirl of yogurt or crème fraiche and a sprinkling of parsley and chives.

  9. You can freeze this recipe but leave out the cheese until you are ready to eat it.
